Description

The grapes used to produce Telavè come from vineyards located on gentle slopes along the coastline of the Ogliastra region. The proximity to the sea moderates temperatures, creating an ideal environment for the vines and slowing the ripening of the grapes, ultimately resulting in higher levels of acidity and concentration of flavour at harvest. The vineyards are south-facing and lie 350 - 450 metres above sea level on varied soils, mostly of calcareous - schist origin, upon which Vermentino thrives. The vines are 20 years old on average and trained in the Guyot system.

The 2024 growing season started with a mild winter and modest rainfall, prompting early bud break. Spring delivered moderate precipitation, while July's hot, dry conditions slowed vegetative growth and created perfect veraison conditions. August temperatures were warm, followed by a sunny, dry September that allowed grapes to reach peak maturity across all vineyard parcels. The result was exceptional fruit quality with highly concentrated flavours.

Serving suggestions

- Serve chilled (8-10°C) in thin elegant white wine glasses to highlight freshness and aroma.

- Garnish with a thin slice of green apple or a twist of lemon peel on the rim for a subtle citrus accent and visual appeal.

- Create a light spritzer by topping the white wine with a splash of sparkling mineral water and a few fresh mint leaves for refreshing bubbles and herbaceous notes.

- Pair with seafood ceviche served in clear glass cups garnished with microgreens and edible flowers to elevate elegance and complement the wine’s crispness.

- Present alongside a platter of grilled sardinian pecorino cheese cubes drizzled with honey and sprinkled with toasted pine nuts for a savory-sweet contrast.

- Use as base white wine in a Mediterranean-inspired cocktail with muddled basil cucumber slices and a dash of elderflower syrup; serve in a short tumbler over ice with a cucumber ribbon garnish.

- Ideal for a sunset garden aperitivo on a warm evening paired with light bruschetta topped with marinated cherry tomatoes olives and fresh thyme.

- For a unique twist freeze white wine cubes and use them in a glass as ice against a fresh fruit salad preventing dilution while enhancing the fruity flavor.

- Offer at a coastal dinner party alongside grilled shrimp skewers brushed with lemon-garlic oil and sprinkled with chili flakes for a flavor harmony that excites the palate.

Storage advice

For optimal storage of white wine:

- Temperature: Store at a consistent cool temperature between 7°C and 13°C (45°F to 55°F) ideally around 10–12°C (50–54°F) to preserve delicate aromas and freshness without accelerating aging.

- Light Exposure: Keep bottles in a dark environment away from direct sunlight and UV rays as light can spoil the wine by breaking down flavor compounds.

- Sealing: Ensure the cork remains moist to prevent air ingress; maintaining proper humidity aids this.

- Bottle Position: Store bottles horizontally to keep the cork in contact with the wine preventing it from drying out and shrinking which might allow oxidation.

- Humidity: Maintain relative humidity between 60% and 70% which helps keep corks from drying out while avoiding mold growth.

- Additional Tips: Avoid temperature fluctuations because heat causes wine to age prematurely and cold delays aging; also ensure good air quality and ventilation to prevent musty odors.

For opened bottles of white wine reseal tightly with the original cork or a wine stopper and store in the refrigerator at around 4°C (39°F). Consume within 2–3 days for best quality. If longer storage is needed vacuum sealing or inert gas preservation systems can help slow oxidation.
