Description
The John Duval `Plexus` Barossa Shiraz/Grenache/Mourvèdre 2021 is a captivating red wine that showcases the exquisite terroir of the Barossa Valley. Crafted with a meticulous blend of three varietals, this wine demonstrates the elegance and depth of the region's viticulture. The Shiraz grapes originate from the venerable old vineyards nestled in the Krondorf and Tanunda subregions, while Grenache finds its roots in the respected regions of Moppa, Greenock, Ebenezer, and Tanunda. The Mourvèdre grapes are sourced from the Ebenezer and Light Pass areas.
The 2021 vintage was exceptional, marked by warm conditions and well-timed rainfall that allowed for optimal ripening. This resulted in fruit that is full of concentration and character. Fermented separately using traditional methods in small open stainless-steel fermenters, the addition of whole bunches for a portion of the Grenache enhances the wine’s savory complexity while maturation in fine grain French oak adds depth and richness.
- Nose: A vibrant bouquet of ripe blackberry, black cherry, and plum is interwoven with delicate floral notes of violet and lavender, accompanied by hints of dark chocolate and spice.
- Palate: The palate is lush and velvety, revealing layers of red and black fruits complemented by fine, supple tannins and balanced acidity for a long, captivating finish.
- Finish: An elegant conclusion with lingering notes of dark chocolate and tobacco, highlighted by velvety tannins and a pure, fruit-driven essence.
This bone dry red wine presents a medium-bodied profile, making it an excellent choice for various pairings. For optimal enjoyment, serve slightly below room temperature at around 16-18°C (60-65°F), utilizing large tulip-shaped glasses to allow for full aromatic expression. Consider pairing this wine with:
- Grilled and smoky dishes: Charred lamb kofta or spiced lamb sliders.
- Vegetarian options: Grilled eggplant drizzled with pomegranate molasses.
- Rich desserts: Dark chocolate chili truffles or smoked blue cheese on rye crackers.
- Main courses: Red wine reduction sauce served over slow-cooked venison or mushroom ragout.
- A refreshing cocktail: Mix with soda water and a splash of blood orange juice for a unique spritz.
- Culinary experiments: Wine-poached autumn fruits served over whipped mascarpone.
This Plexus Barossa Shiraz Grenache Mourvèdre is not just a wine; it’s an experience that encapsulates the essence of the Barossa. Whether enjoyed on its own or paired with thoughtfully selected dishes, this wine promises a journey of exquisite flavors and elegant complexity.

Serving suggestions
- Serve slightly below room temperature around 16-18°C (60-65°F) to balance the wine’s freshness and depth without muting its nuance.
- Present in large tulip-shaped glasses to allow full aromatic expression and gentle aeration.
- Pair with dishes featuring smoky or grilled flavors: charred lamb kofta spiced lamb sliders or grilled eggplant with manchego and pomegranate molasses drizzle.
- For an unexpected twist serve alongside dark chocolate chili truffles or smoked blue cheese on rye crackers for contrasting richness.
- Use as a base for a red wine reduction sauce enriched with fresh rosemary and cracked black pepper perfect over slow-cooked venison or mushroom ragout.
- Create a red wine spritz cocktail by mixing chilled red wine with soda water a splash of blood orange juice and a sprig of thyme for a refreshing savory aperitif.
- For informal gatherings offer it lightly chilled (12-14°C) to enhance fruit brightness paired with grilled vegetable kebabs brushed with harissa or smoky paprika.
- Garnish individual servings or decanter with a cinnamon stick or star anise for a subtle warming spice infusion during cooler evenings.
- Experiment with wine-poached autumn fruits like plums or black cherries served over whipped mascarpone gently soaked in red wine to highlight complementary notes.
Storage advice
For optimal storage of red wine (such as Shiraz Grenache Mourvèdre blends) maintain a temperature between 55°F and 65°F (13°C to 18°C) ideally close to 55°F (13°C); avoid fluctuations and temperatures above 70°F (21°C) to prevent premature aging or spoilage.
Store the bottle in a dark place away from direct sunlight and fluorescent lighting as UV rays degrade wine quality. If lighting is needed use incandescent bulbs to minimize damage.
Maintain humidity between 50% and 70% to keep the cork moist and prevent it from drying out or shrinking which could admit air and spoil the wine. Use a humidifier or dehumidifier if necessary to manage humidity levels in the storage environment.
Keep the bottle lying on its side to ensure the wine remains in contact with the cork preventing the cork from drying out and shrinking thus preserving the seal integrity.
For opened bottles limit oxygen exposure by recorking tightly or using a wine stopper. Store opened red wine in the refrigerator (around 40°F to 45°F 4°C to 7°C) to slow oxidation and preserve freshness then allow it to come back to serving temperature (60°F to 65°F) before consumption.
Avoid storing red wine in places subject to vibrations or strong odors which may negatively affect wine quality.
